Burnt basque cheesecake!

Ingredients

  • 326g softened cream cheese (1 bar)
  • 40-45g organic sugar
  • 10g cornstarch
  • 3 eggs
  • 1 egg yolk
  • 90g heavy cream
  • tiny bit of lemon juice
  • pinch of salt

Steps

  1. Preheat the oven to 430 F
  2. Take out the cream cheese beforehand. Softened the cream cheese. Add in sugar and beat until smooth.
  3. Mix a tiny bit of heavy cream with cornstarch till dissolved, and then beat together 1 till smooth
  4. gradually add in 3 eggs and 1 egg yolk and heavy cream and tiny bit of lemon juice and pinch of salt till liquidy and smooth (the mixture will fall smoothly from the spatula)
  5. crinkle the baking sheet (creates the pattern on the cheesecake) and pour all things in
  6. bake for 25min, and 5 -10min in 450F, watch closely for level of burnt surface (till golden brown)
  7. Cool off, fridge overnight and serve :)
