Burnt basque cheesecake!
Ingredients
- 326g softened cream cheese (1 bar)
- 40-45g organic sugar
- 10g cornstarch
- 3 eggs
- 1 egg yolk
- 90g heavy cream
- tiny bit of lemon juice
- pinch of salt
Steps
- Preheat the oven to 430 F
- Take out the cream cheese beforehand. Softened the cream cheese. Add in sugar and beat until smooth.
- Mix a tiny bit of heavy cream with cornstarch till dissolved, and then beat together 1 till smooth
- gradually add in 3 eggs and 1 egg yolk and heavy cream and tiny bit of lemon juice and pinch of salt till liquidy and smooth (the mixture will fall smoothly from the spatula)
- crinkle the baking sheet (creates the pattern on the cheesecake) and pour all things in
- bake for 25min, and 5 -10min in 450F, watch closely for level of burnt surface (till golden brown)
- Cool off, fridge overnight and serve :)
